Fattoria del Sole produces more than 17 different kinds of FORMAGGIO including Fresh Mozzarella, Mozzarella Light, Cherry Mozzarella, Mozzarella Di Bufala, Mozzarella Rouleau, Mozzarella Sheet, Burrata, Scamorza, Affumicata, PROVOLONE, Aged Provolone, RICOTTA, Taleggio, Gorgonzola, Strachino, PECORINO and Caprino.
The factory is an artisanal factory with no automated machines or artificial flavors, which increases the quality of cheeses without disturbing the natural equilibrium or rhythm of the production.
WHAT’S THE INNOVATION?
The Mozzarella di Bufala Campana is produced exclusively with pasteurized fresh whole Buffalo milk, from registered Italian Mediterranean buffaloes. Unfortunately for the “Buffalo mozzarella lovers” in the world, the diffusion of this specialty outside the production area is very limited due to a major constraint: “real” Mozzarella loses its wonderful flavor fast. People living within the production area would in fact typically refuse a “too old” Mozzarella made only two days before! For this reason, the mozzarella must be consumed in the region where it is produced, which is why Fattoria Del Sole was initially established, bringing the real taste of Fresh Mozzarella to the region.
WHAT’S THE STORY BEHIND THE INNOVATION?
In 1997, Mr. Naji Khairallah, founder of Fattoria del Sole, was having dinner at a Beirut restaurant and asked for fresh mozzarella. The waiter brought him the “yellow, imitation kind,” as Khairallah recalled. Having spent over 30 years in Italy, Khairallah thought of launching a Fresh Mozzarella Factory in Lebanon.
